I hope you are all well, and being healthy and enjoying life! I'm definitely doing my best to do so as well!! I thought I should share with you a little info that you might not have seen since I only posted it on my youtube channel, but not here...
I am having to postpone my fast... yet again... for a different reason this time. I'll be frank....money is too tight... like pants 5 sizes too small tight, which means that for us, a luxury of my fast is too much to handle at this time. It's not that it is really THAT costly to do a juice fast, it's that we can't go grocery shopping. Period. Right now. So, I've been extremely busy creating things with what we have in the pantry and have been very successful lately, while also staying as healthy as can be. So, since I figured there are probably plenty of you guys out there who are also tight on cash right now, it would be helpful if I shared some of my ways to make yummy meals out of normal foods. You see, last night, we had top ramen... yep. Top ramen...that yummy noodle dish you can make from a packet. Well, I ike to make mine fancy and when I do, I call it "Asian noodles" =) And everyone is excited to eat it when it's Asian Noodles instead of Top Ramen at my house, especially since we have been having a lit of it lately lol! So, here's what I did:
"Asian Noodles" (Fancy Top Ramen)
Serves 2 people
3 pkgs Beef Top Ramen (use all three noodle blocks, but only ONE seasoning packet - set the packet aside)
2 Carrots - sliced
1 Onion - sliced
1/4 c. Jalapenos (I used the kind that come in a can)
1/4 c. Soy Sauce
1 t. crushed chilis in oil (can also sub 1 t, cayenne or simply crushed chilis for this) - the chili oil is found in Asian Markets - this is optional, use only if you like spicy foods!
1 T. fish sauce (optional) - also found in Asian Markets
3 T. Sugar
Put carrots in a saute pan with 1/4 c. water - simmer about 2 minutes. Then add the onions + jalapenos and saute for about 5 more mins while you prepare the sauce
Sauce: Pour soy sauce, Fish sauce, Chilis, Sugar, 1 t. Sesame Oil, and ONE Beef Seasoning Packet from the Top Ramen packages into small pan and simmer until boiling on edges. Next, pour into pan with carrots and onions, continue to simmer while you prepare the noodles.
Place the noodles into a pot with hot water and cook until just broken apart. Do not worry about if the water is boiling, just watch for the noodles to separate- this is important because if hte noodles become too cooked, it will make the next step very difficult!
Pour the vegetable/sauce mixture into a bowl and set aside. Add sesame oil to the pan... about 2 T. and then scoop out of the noodle pot, the noodles, placing them into the oiled pan. With your spoon/spatula, separate the noodles into two "piles" (one for each person). Then just leave it for about 3 minutes.
Check it with your spatula by lifting underneath and seeing if it is crispy. If so, then flip and crisp the other side. If your pan is low on oil, add a little bit more around edges of noodle piles. You will know when they re done if they look crispy on both sides.
Place each pile into it's own bowl, and pour generous mixture of vegetables over top - spooning some sauce as you go. It's ok if you don't use all the sauce. Add hot water by the spoonful (from the noodle pot) over the top of the bowl until at your desired level of "soupiness" and then: Voila! Asian Noodles! =)
***This works with LOTS of different vegetables, this just happened to be all we had in the fridge... but I've done this with kale, spinach, chard, green onions, celery, etc. Play with it... makes it not seem so much like "I'm broke food" when you do this to it!! =) I'll take pics next time I do it and come back and add them on here for you to check it out!
